And although some of us were raised using chopsticks, it can be an awkward experience for the rest of us. Fortunately, learning to eat with chopsticks can be a simple matter of time and patience.

Many of us labor under a misperception about chopsticks--that both sticks are moved together in your hand as you pick up a morsel. This is only half-true. Instead you'll be holding one chopsticks in place while pivoting the other one to meet it. Simple, eh?

Here’s a really smart idea for eating sushi, soy sauce dispensing chopsticks that will eliminate the need for your to use a sauce pan. Image below. Well, the only thing they forgot, is to put wasabi.

these three-legged chopsticks (image below) work a bit like tweezers making it easier to grasp and consume food with grace.
Chopsticks are small tapered sticks used in pairs of equal length as the traditional eating utensils of Greater China, Japan, Korea, and Vietnam. Generally believed to have originated in ancient China, they can also be found in some areas of Tibet and Nepal that are close to Han Chinese populations. Chopsticks are most commonly made of bamboo or plastic, but are also made of metal, bone, ivory, and various types of wood. The pair of sticks is maneuvered in one hand, between the thumb and fingers, and used to pick up pieces of food.

Universal etiquette

  • Chopsticks are not used to make noise, to draw attention, or to gesticulate. Playing with chopsticks is considered bad mannered and vulgar (just as playing with cutlery in a Western environment would be deemed crass).
  • Chopsticks are not used to move bowls or plates.
  • Chopsticks are not used to toy with one's food or with dishes in common.
  • Chopsticks are not used to pierce food, save in rare instances. Exceptions include tearing larger items apart such as vegetables and kimchi. In informal use, small, difficult-to-pick-up items such as cherry tomatoes or fishballs may be stabbed, but this use is frowned upon by traditionalists.
  • Chopsticks should not be left standing vertically in a bowl of rice or other food. Any stick-like object pointed upward resembles the incense sticks that some Asians use as offerings to deceased family members; certain funerary rites designate offerings of food to the dead using standing chopsticks.

The above brass bell has been handed down through our family and with time, the history of this little bell has been lost.

Amsterdam and Peroff have a new white paper discussing the case of opposition leader Dr. Chee Soon Juan in Singapore. The introduction of the executive summary of the report is below, followed by a link for downloading the full paper.

Introduction

This White Paper documents the repression of political freedoms in Singapore. It reviews how the Government of Singapore, under the leadership of the People's Action Party (PAP), has monopolized the state's apparatus to its own benefit. The result has been the denial of democratic rights and freedoms and the muzzling of domestic and international media.

The case of Dr Chee Soon Juan is examined in detail. Anne (not her real name)  was fourteen years old and lived in Bedok with her parents and younger brother. A lively child who loved going out with friends,  playing computer games and caring for animals. Earlier this year she became violently ill, probably as a result of food poisoning. Her mother worked as a catering assistant for a a subsidary of a large MNC. She earned just six Singapore dollars an hour. Knowing that a visit to a health centre would cost a minimum of $30 - she delayed taking her daughter to a doctor, perferring to fall back on home medication. Later Anne's condition  deterriorated rapidly and an ambulance was called. She was taken to Changi General Hospital where she lapsed into a coma an died a few hours later. We attended her wake at Bedok - within a few yards of the HDB apartment block where she had lived, there were four doctor's surgeries.  Another grim statistic - the unacceptable human price of the minimum wage - a little girl's life.

I saw a small, dark object on the driveway as we were pulling up a couple of weeks ago (it was dark). Then I heard a popping noise as we went over the small, dark object. I didn't think much of it at the time - assumed it was something one of the neighborhood kids accidently left in our driveway.

Next morning, we found out that what we ran over was a baby rattlesnake.

The case of Dr Chee Soon Juan is examined in detail. As leader of the Singapore Democratic Party, Dr Chee has been repeatedly sued, charged, and sentenced ever since his first political act of opposition. The White Paper notes that ever since Singapore gained internal self-government in 1959, it has been ruled by the PAP which has won control of Parliament in every election. The government has solidified its near monopoly on the political machinery of the state by undermining the rights guaranteed by the Constitution of Singapore through the passage of unconstitutional domestic laws. The combination of a compliant judiciary, a media silenced through state ownership and the ever-present threat of defamation and libel suits have created a climate for the suppression of political freedoms.

Recent legislative developments with the enactment in April 2009 of the Public Order Act have consolidated further the authority of the ruling PAP over the political opposition. The White Paper calls upon foreign governments, NGOs, and the media to put pressure on the Government of Singapore to act on the demands of the political opposition as well as for:

- APEC leaders attending the November 12-14 Summit in Singapore to meet with representatives of civil society in Singapore, including Dr. Chee, leader of the SDP;

- ASEAN to establish a viable Human Rights Commission;

- The charges against Dr Chee and other members of the political opposition to be dropped;

- A campaign for an independent and impartial judiciary in Singapore;

Nothing beats Arab Street for bazaar-style shopping with true ethnic character! Here, you can browse in delightful hole-in-the-wall shops, haggle to your hearts’ content and come away with the most enchanting trinkets and keepsakes at bargain prices.

The most visible items for sale are the baskets and other cane, straw, rattan and pandan leaf goods spilling out onto the pavements - from baby cradles to floor mats, hanging chairs to serving trays. These shops also stock interesting camel skin bags, cloisonne boxes, sewing kits, and fishing tackle items for both the amateur and the professional angler.

Arab Street is the centre of the Muslim community where it used to be the main selling place of Muslim men’s headgear (or songkok), the holy Quran, prayer mats and textiles. Today, the real glory of Kampong Glam and Arab Street is the textiles. Bales of gorgeous chiffon, silk, cotton georgette and other luxurious fabrics crowd the pavements, in rainbow hues and intensities.

The area is also renowned for batiks from Indonesia and Malaysia, exquisitely hand-made by the wax-resist dye method and typically sold in sarong lengths. Machine-printed batik with traditional designs is also available by the metre or in ready-made shorts, sundresses, ties, table linen and more.


Kampong Glam (or Gelam) literally means ‘village of eucalyptus’. Gelam is a eucalypt variety that grew nearby and was used in oils for medicines and for making boats watertight. Previously home to Singapore’s Malay aristocracy before colonial rule, Kampong Glam and Arab Street area remain a relaxing and interesting area to eat, explore and learn about the city’s Malay roots.

Under the Raffles Plan, Kampong Glam was set aside for the Sultan of Singapore and the Malay and Arab communities. This, and the number of important mosques in the district, means this area is also often referred to as the ‘Muslim Quarter’.
While much of the Malay community later moved to Geylang and other suburbs, the area is still an important one for the community. It buzzes with activity during the fasting month of Ramadan, when many Muslims break their fast here, and buy food and traditional wares for the feast that follows, Hari Raya Puasa.

The area is a great place to eat and explore, tucked nicely away from much of the bustle of the central city. Stroll around its famous textile shops, and check out the stores selling fishing tackle, jewellery and rattan furniture. Later, stop by one of the cafes for tea and to smoke a shisha pipe

Masjid Sultan (Malay for Sultan Mosque) is located at Muscat Street and North Bridge Road within the Kampong Glam district of Rochor Planning Area in Singapore. The mosque is considered one of the most important mosques in Singapore. The prayer hall and domes highlight the mosque's star features.

So how was your Halloween? I know it is not widely celebrated here in Singapore but I think the Singaporeans are coming around to the idea of dressing up in ghoulish costumes and wandering the streets looking for candy. There were many local families trick-or-treating around our neighbourhood on Saturday night, mostly with very small children.

We were delayed by the most frightening electrical storm I have experienced here in Singapore. Perhaps the stories circulating of Singapore having the highest rate of lightening strikes, and people's brains being fried by lightening didn't help, but when we saw one young girl dressed up as some cartoon character, with metal balls all over her walking through the flooded street with the lightening flashing overhead, we almost died. I guess her father, trailing behind her, just didn't want to disappoint.

We stuck it out until the lightening stopped before venturing out, and all the more spooky it was for it. I hung back at the house to hand out candy while the gang of a dozen kids with parents roamed around. Ben came back with an overflowing pumpkin, so heavy the handle almost broke off.

It was a great night despite the storm, or perhaps because of it. Some friends had a great time trick-or-treating in the Woodlands area, where they didn't get the storm. The candy there was all imported form the U.S apparently, no gummy worms and herbal candy for them!

on the Australian news on-line this morning, I read an article about the high cost of living in Australia..... MILK .... one of the most staple foods of all and don't forget, Australia has farms with cow's, the milk is an outrageous price:

"A litre of milk, which costs between $2.70 and $4.50 in Melbourne, costs New York shoppers little more than $1 while Tokyo's milk drinkers pay $2.34, despite cow's milk not being a staple in that city"


$2.70 AUD is $3.46 SGD
$4.50 AUD is $5.77 SGD

Now I know that the farmers don't get anywhere near that price, my cousin (Andrea) is a framer and she told me once that they don't even get 50 cents a litre.... actually I think she says it was about 20 cents.


Here in Singapore I pay $1.70 for a litre of milk. That is SGD.
with the currency exchange only $1.32 AUD!!! Would you believe that I buy Australian (sometimes NZ) milk at that price?

I would never pay between $3.46 and $5.77 (SGD) for a litre of milk like the Australians do!

Singapore IMPORTS everything, that includes milk..... yet we pay less than the Australians for their own milk.
If anyone thinks it is expensive to live in Singapore, go look elsewhere and stop complaining about the "high cost of living here"!!

Having missed lunch due to over-enthusiastic sightseeing, we dove straight into the masses and joined the search for something edible within. I say this because we passed an awful lot of stalls displaying what some (including yours truly) would be hard pushed to consider food:

I’m ashamed to say we avoided the bugs, grubs, scorpions and starfish and lamely opted for lamb on a stick… although it was very tasty…

And then came across this intriguing stall – where they were freshly preparing little balls in tins loaded with batter, cabbage and octopus, before firing them in the oven and then roasting them over hot coals. I have since discovered that this is Takoyaki, a popular Japanese snack, but it was new to us.

So we joined the queue and took delivery of our hot and sticky octopus balls – they even came in a fancy box… and these guys have their own website – not quite scorpion on a stick, but pretty tasty anyway.

The SCC International Rugby Sevens Tournament is being held at the Padang again this year, on the 6th, 7th and 8th of November. This is always a fun event, with lots of exciting action on the field and even a playground with a bouncy castle to keep the kids happy.

We went last year and enjoyed it a lot. There is plenty of covered seating with fans but there is no getting away from the heat of the day. This year the schools and colleges of Singapore will be competing on Friday 6th November from 8am, and the International Women's Rugby Tounament will take place at 5pm.

The weekend will be taken up by international teams from Australia, South Africa, Hong Kong, Indonesia, India, Malaysia, Japan. This year The Shophouse Fair will be there if you want to grab some unique gifts, and there will be airbrush tattooing and plenty of food and a flowing bar.

As far as I know, there are three branches of Da Dong Restaurant in Beijing. We opted for the one in Chaoyang as it was within walking distance from our hotel. If you fancy trying it but aren’t staying in the area – it’s right next to Gongtibeilu subway station, so it’s easy to get to.

They don’t take reservations after 6.30pm, so we had to join a queue. It was about a 40 minute wait, but those folk at Da Dong know how to keep their customers happy – we had a comfy seat in the windowed corridor with views out over the street and, more importantly, free drinks (soft drinks, tea and boxed wine) while we waited.

We were fairly famished by the time we were shown to our table and were eager to get immediately stuck into the duck. We ordered half a duck, but were soon distracted by the enormous menu full of other enticing goodies. As it was our first night, we were slightly over excited and, as usual, ordered a tableful of food for just the two of us.

The duck actually arrived last – presumably as it is the most ordered item on the menu, we had to wait in line. The chef carving our duck introduced himself to us and allowed us to inspect the bird before he set about dissecting it in front of us.

This he did deftly and quickly and the succulent slices were soon set out in front of us, together with the usual accompanying paraphernalia – pancakes, various sauces, and sliced radish, cucumber and spring onion.

It was delicious – well worth the wait and thankfully lived up to our expectations. What exceeded our expectations however, was the quality of the other dishes on the table, in particular those sticky sweet prawns – they were truly fantastic and presented beautifully.

If you do happen to find yourself in Beijing with a duck craving – I’d say you could do far worse than head to Da Dong.
